Shake Mix for Fish

1 1/2 cups fine dry bread crumbs(4 slices dry bread)
1/2 cups corn Meal
1 teaspoon Salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Combine ingredients Mix well and store in an air tight container
Quick ‘n Easy Fish Sticks
1 pound fresh or frozen fish fillets
1/2 cup milk
1 cup seasoned Shake mix
1/4 cup cooking oil
Thaw fish if frozen, Cut fish into serving size pieces and dip in Milk. Roll in shake mix. Heat the oil on medium high heat. Fry the fish in hot oil for 4 to 5 minutes until brown. Turn the fish carefully. Fry 4 to 5 minutes or till done. Test the fish with a fork, it is cooked when it flakes apart easily.
Shake and Bake Mix
2 cups fine bread crumbs
1/2 cup flour
4 teaspoons paprika
2 teaspoons poultry seasoning
1 teaspoon pepper
1/2 cup shortening
Combine bread crumbs, flour, paprika, poultry seasoning, and pepper in mixing bowl. Mix thoroughly. Cut in shortening until mixture resembles coarse crumbs. Place in air tight container and store on the shelf for up to 3 months. Yield 4 to 4 1/2 cups. Use about 2/3 cup per chicken.
Dip the chicken pieces in milk then into coating. Arrange in single layer in ungreased shallow baking dish. Bake at 400 degrees for 45 to 50 minutes, or until tender and brown.
Magic Mix
4 cups instant nonfat dry milk
1 cup (2 sticks) margarine
1 cup flour OR 1/2 cup cornstarch
Combine dry milk, flour or cornstarch and margarine in a large bowl and mix until it looks like cornmeal. Keep mix tightly covered in the refrigerator. Makes 5 cups of mix. Use it to make the following:
Magic Cream Soup
4 cups water
2 cups Magic Mix
1 cube or 1 tsp bouillon granules
Combine in a saucepan: water, Magic Mix and bouillon. Stir over medium heat until slightly thick. Add ONE of these: 3 carrots, mashed; 3 potatoes, cooked and chopped and 1 T diced onion; 1 package chopped spinach, cooked; or 1 can cream-style corn and 1 T chopped onion. Makes about 6 cups of soup. Good way to use up little dabs of left over cooked vegetables.
Magic Sauce
2/3 cup Magic Mix
1 cup water
In saucepan combine Magic Mix and water, making sure the dry milk is dissolved. Stir over medium heat until it starts to bubble. Add cooked meat, cheese or veggies to the hot sauce. Makes 1 cup. Use Magic Sauce for all recipes calling for a white or cream sauce. Especially tasty when substituting chicken or beef broth for the water.
Magic Pudding
1/4 cup sugar
2 cups Magic Mix
2 cups water
1 tsp vanilla (Optional)
Combine in a saucepan: Magic Mix, water, and sugar . Stir over medium heat until pudding bubbles. Add vanilla and beat. Cover and cool. FOR CHOCOLATE PUDDING: Combine 3 TBS cocoa with the sugar and follow the original steps. Makes 2 cups pudding or 4 1/2 cup servings. If using artificial sugar, stir equivalent amount after taking from the heat. The artificial sugar gets bitter otherwise.
Hamburger Helper
Hamburger dinner Sauce Mix for Homemade Skillet Dinners
1/4 cup flour
1 tablespoon grated parmesan cheese
2 bouillon cubes or 2 tsp. powdered bouillon
1 tablespoon nonfat powdered milk
2 tsp. dehydrated onion
Mix ingredients. Wrap tightly in aluminum foil. Store in air-tight container.
Yield: Enough for one skillet dinner.
To use mix: Add sauce mix to 1 lb browned hamburger, with water or a can of condensed soup to equal 2 cups fluid. Add 1 cup uncooked macaroni/spaghetti or noodles. Bring to a boil and turn heat to low. Cover and simmer 15 to 20 minutes.
To use rice, increase time to 25 minutes.
Homemade Hot Cocoa Mix
1 (8-quart) box instant powdered milk
1 (16 ounce) jar nondairy creamer
1 (2 pound) box Nestlé’s Quik®
1 (1 pound) box confectioners’ sugar
Sift sugar and mix together. Add 2 cups miniature marshmallows, if desired.
To use, fill a mug half full of mix. Add boiling water.
