I always have some sort of pancakes in my freezer. They are such a frugal food, made with basic pantry ingredients, they freeze great and can be sweet or savory. I have them for breakfast, lunch, even dinner.
Here are some of my favorite recipes, these are all tried and true:
Blueberry Blueberry Sour Cream Pancakes Recipe #22274
If you like blueberries, this breakfast treat is for you. I am prejudiced but use wild Maine berries. They have that extra “bite”!

4 servings 12 pancakes
25 min 10 min prep
1 cup sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 egg
1 cup milk
1/2 cup sour cream
2 tablespoons melted butter
1/2 cup floured blueberries
Mix dry ingredients.
Beat together wet ingredients.
Add to dry ingredients and mix well.
Add blueberries last and fold in carefully.
Zucchini Feta Pancakes
4 eggs, separated
4 cups packed shredded zucchini
1 cup finely crumbled feta
1/2 cup minced green onion (I used regular onion)
1 tsp dried mint (omitted, dodn’t have any)
Lots of black peppper
1/3 cup flour
Beat egg whites until stiff.
In bowl, combine remaining ingredients, fold in egg whites.
Fry in oil intil golden and crisp on both sides.
Serve with yogurt or sour cream
Pumpkin Pancakes
2 cups flour
3 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp salt
1 1/2 cups skim milk
1 cup pumpkin puree
1 egg
Combine dry ingredients in a bowl. In separate bowl combine all wet ingredients, add to flour mixture, stir gently to combine. Use 1/4 cup batter per pancake, cook on lightly greased griddle or pan until browned on both sides.
Potato Pancakes
2 cups grated raw potatoes
2 tsp grated onion, I usually don’t use
2 tbsp flour
3/4 tsp salt
1/8 tsp pepper
1/2 tsp baking powder
2 beaten eggs
Mix potatoes with onion,flour, salt, pepper and baking powder. Combine with eggs. Heat oil and drop mixture by tbsp into pan. Fry until golden brwon about 2 minutes/side.
Carrot Pancakes
1 egg
2 tbsp. water
1/4 c. flour
1/2 tsp. baking powder
Pinch of salt
1/2 c. grated carrots
1 tbsp. chopped onion
1 tsp. parsley flakes
Beat egg and water together. Combine dry ingred. and add to egg mixture. Stir well, then fold in carrots, onion and parsley.
Drop by spoosful onto an oiled, preheated nonstick skillet. Flatten to 1/4 inch and cook on medium -high till bottom of pancake is brown- Turn and brown other side
Pizza Pancakes
Create fun and tasty mini-pizzas by topping pancakes with all of your favorite toppings. Who would have thought that “pizza” was so easy to make?
2 cups Original Bisquick® mix
1 cup milk
2 eggs
1/2 cup shredded mozzarella cheese (2 ounces)
1/2 cup chopped pepperoni
1/2 cup chopped tomato
1/2 cup chopped bell pepper
2 teaspoons Italian seasoning
Pizza sauce or spaghetti sauce, if desired
Grated Parmesan cheese, if desired
Heat griddle or skillet; grease if necessary. Stir Bisquick, milk and eggs in large bowl until blended. Stir in remaining ingredients except pizza sauce and Parmesan cheese (batter will be thick).
Pour batter by slightly less than 1/4 cupfuls onto hot griddle; spread slightly.
Cook until edges are dry. Turn; cook until golden brown. Serve topped with pizza sauce. Sprinkle with Parmesan cheese.
Cottage Cheese Pancakes
1 1/2 cups flour
1/4 cup packed brown sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup cottage cheese
1 cup milk
2 eggs
3 tbsp butter,melted
1/2 tsp vanilla
In bowl, mix flour, sugar, baking powder and soda, salt.
In another bowl combine remaining ingredients and mix well. Pour liquid ingredients over dry and mix until just combined. Batter will be thick and lumpy.
Preheat griddle (I used non stick frying pan) to 350and spray with oil
Cook on each side until golden brown.
Cottage Cheese and Apple Pancakes
4 eggs, separated
1 cup cottage cheese, I use low fat
1 cup packed, grated tart apple (I used granny smith)
3/4 cup flour
1-2 tsp lemon juice
1 tbsp honey
1/2 tsp cinnamon
1/2 tsp salt
2-3 tbsp finely chopped walnuts or almonds, optional
Beat egg whites until stiff.
Combine all other ingredients ad fold in whites.
Heat oil in skillet and fry until firm and golden brown on both sides.
