Cajun Spice Mixes

Cajun Spice Mix 1

Ingredients

1/4 pound kosher salt
1/2 cup chili powder
1/2 cup Spanish paprika
2 Tbsp onion powder
1/3 tsp cumin
3/4 tsp cayenne pepper
1-1/2 Tbsp dried thyme
2 Tbsp coarsely ground black pepper
2 Tbsp dried basil
2 Tbsp dried oregano
2 Tbsp ground coriander
1/2 tsp white pepper

Instructions

Mix all ingredients together and place in a jar for storage. Store in a cool, dark place up to four months.

Use this mixture for barbecue ribs, chicken, blackened fish, Cajun soups or sauces, blackened steaks and blackened pastas.

Cajun Spice Mix 2

Ingredients

1/4 Cup of salt
2 Tbsp. cayenne pepper
2 Tbsp. paprika
1-1/2 Tbsp. onion powder
1 Tbsp. freshly ground black pepper
1 Tbsp. freshly ground white pepper
1 Tbsp. garlic powder
2 tsp. dried basil
1 tsp. chili powder
1/4 tsp. dried thyme
1/4 tsp. ground mustard
1/8 tsp ground cloves

Instructions

Combine all ingredients in a small jar. (The spice mix can be stored in a tightly covered glass jar in a cool dry place out of direct light for up to 4 months.) Makes about 3/4 cup.
