Breadsticks

2 cups warm water
5 T white sugar or honey
1 1/2 tablespoons yeast
1 1/2 teaspoons salt
1/4 cup oil
5-6 cups flour
1/4 cup cornmeal
2 Tablespoons of olive oil
Parmesan cheese, Rosemary, salt or what ever you would like to put on top of the breadsticks. A mixture of Parmesan and an all-purpose seasoning salt works wonderfully.

In a large bowl, dissolve the sugar in warm water: add yeast.

Mix in salt and oil. Work in the flour until dough no longer looks wet. Knead on a floured surface until smooth. Place in a well oiled bowl, turning to coat dough with oil. Cover and allow to rise until doubles, about 1 hour.

Punch dough down. Knead again and divide in half. Roll each half into a circle about a quarter inch thick. You can form the bread sticks in one of two ways, you can place the circle of dough on a cookie sheet that has been prepared with cornmeal, and then cut them lengthwise, leave in place, and let rise for 20 minutes. Brush with olive oil, and sprinkle with your flavorings.
To make them into sticks, cut the circles, into strips, and twist the strips, placing them on the cookie sheet, prepared with corn meal. Let rise for 20 minutes, and brush with oil and sprinkle with flavorings.

Bake for 20 minutes, at 350 or until golden brown.
