Basic baking Mix

This is the homemade version of the kind of baking mix you buy in the store, you know, the "quick" type.  I have used it to make all the recipes I have ever found that call for that "quick" type baking mix. 

-8 1/2 cups of all purpose flour
-1 TBS salt
-2 tsp cream of tartar
-1 tsp baking soda
-1 1/2 cups of dried milk
-2 1/4 cups of shortening

Stir the dry ingredients together and then cut in the shortening until there are coarse crumbs.  Store the mix in an airtight and cool area.  This mix easily keeps two to three months or more if you keep it frozen.  If you freeze it for longer storage, make sure it's brought to room temperature before you begin to use it.
